Recommended Application in Persimmon
BACKGROUND
A Persimmon is the edible fruit of a number of species in the genus diospuros. Persimmon are generally light yellow-orange to dark red-orange in color and depending on the variety vary in size may be spherical, acorn or pumpkin-shaped. They are high in glucose, with the balanced protein profile and possess various medicinal and chemical uses.
There are two main types of persimmons varieties: American and Asian. Spreading the most in the Asian group - sort of Hachiya (Japanese persimmon, or Kaki). Israel launched a persimmon variety “Triumph”, featuring a high sugar content (25%) versus 16% in competing varieties and rich in potassium, manganese, iron, magnesium, vitamin C and B-carotene. Eating persimmon reduces the risk of atherosclerosis of heart and is considered a perfect diet food.
Due to its taste and health properties the persimmon is gaining popularity. In 1970, world production of persimmon was 91 thousand tons, by 2010 the production of persimmon is close to 3 million tons.
